Ingredients

Method

  1. Prepare the fillets, carefully removing the skin and small bones. Season with salt and pepper.
  2. Roll the fish and place in a Pyrex dish alternating with tomatoes and cheese. Leave to stand.
  3. Melt margarine in a pan, then stir in flour and salt.
  4. Add milk a little at a time, then mushrooms, onions and sherry. Stir constantly until the mixture boils.
  5. Pour over the fish. Bake in a moderate oven for 20 minutes until fish is cooked.
  6. Garnish with chopped parsley and serve hot with rice.
